Meals are served family style. We have a preference sheet for you to fill out and return to us. It is very important that you make us aware of every persons dietary needs. A menu will be created specifically for your group, taking into account any food allergies, needs and/or likes and dislikes. Remember, we are in the Islands and certain requested items may not be available to us.
This charter includes the services of Cactus, Betsy and Sheri as your expert guides and chefs, we provision the Galley and Bar to your needs.

Lunch Grilled Panini with smoked turkey, brie and apple served with a horseradish-Dijon mustard sauce accompanied by red Black Bean Burgers topped homemade guacamole and bacon with a black bean, corn and avocado salad
Hors d'oervures Cheese Platter with assorted cheeses, crackers and fresh fruit Home-Made Hummus Dip served with assorted Julienned vegetables Assorted cheese, olive, fruit and cracker platter served with your favorite island cocktail, wine or beverage
Dinner Grilled Mahi Mahi over seasoned rice topped with homemade mango salsa and a side of sweet and sour cabbage Pork Tenderloin atop in an apple, onion, sweet potato sauté with a pureed spiced butternut squash Grilled New York Strip Steaks with roasted potatoes and bacon wrapped Asparagus Grilled Salmon in a buttery dill sauce with wasabi mashed potatoes and ginger-glazed carrots Ahi Tuna and Vegetbles grilled to perfection atop lightly sauteed greens All dinners served with complementing salad and wine from our wine cellar
